What would it be like to be a Roloff? Monday evening comes along and they all sit down together as a family to watch what happened to them 6-12 months ago. What do they see, and what would the conversation during and after the show be like? Normally I would say they should learn a LOT from watching themselves, but this season so far...
I was recently video taped for a training session, and I realized I sounded so harsh when responding to aggressive questions. I learned from it and when we re-taped in the afternoon there was an obvious improvement. The fifth season with the Roloffs is either acting, or density! So far.

You are right. Watching yourself on tape is often very eye opening. They used to tape us in grad school when doing presentations and later critique us. OH MY. I learned a lot.
I hope all the Roloffs learn something if they watch the show, but honestly I think making the younger kids watch it is abusive. That's just my take on it. Sadly, I doubt it will make much difference. I think Amy believes she is just that way and that is it. She thinks she is justified in her conduct.
What I wonder about is what her family, (parents, siblings, etc.) and friends say about it. If one of my sisters or girlfriend acted like that on national tv, I would grab them up so quick and say "Are you crazy?" Get yourself some help with the mouth or get off the tv show! You are an embarrassment to yourself and everyone who knows you." That's what I would say. That is the kind thing to do.
And if I were Matt's parents or friends, I would say "Are you crazy?" Why are you taking that treatment? For the sake of the kids at least, stop Amy from treating you that way. It is embarrassing to you and those that love you."

If I were a Roloff watching this show? Oh my. I'd be mortified.
That being said, I'd probably be mortified if I were to watch a tape of myself. I may not have the same issues, but I sure as shooting know I miss the mark a lot. I don't need a tape to see that.
The difference is, most of my failings remain private.

I doubt that the family watches the shows. Everyone I know in the business stops watching their own work very quickly. After all it's boring, they know what's gonna happen.
