I thought that in one of the old episodes someone did a hanging bed. They literally hung a king- or queen-size bed from the ceiling. I was hoping someone would know what episode it was or how to do it?

It was Kia, and now she's done two hanging beds. The first one was from season 3, Virginia: Gentle Heights Court. You can see a good picture of the bed here....

Also, if you buy the Trading Spaces Behind the Scenes book there's a full page photo of the bed. Basically, they just built a rectangular platform that the mattress sat in, and used large screw eyes and chain to attach it through the ceiling and into the joists in the attic.
Kia just did another hanging bed this past weekend on TS:Family. She redid a young girl's bedroom and the girl requested a hanging bed. That episode was Philadelphia: Roelofs Road.

We are trying to build the hanging bed and was wondering where we could get more instructions on how you do it. Our bed will be smaller and only hanging about two feet or so off the celien but with the same concept.

Vintage, there's a lot more to it that I-hooks. It involves finding the trusses in your attic and drilling all reinforcing them. Then you drill straight through and thread bolts through that have the I at one end and a large washer and nut at the top which keeps it from stripping through the wood.
I don't know of any directions for how to do it, as it's really a unique situation in each home based on the condition of the roof trusses. An alternative is to build a frame using 4"x4"x8' posts and suspending the bed from that. It's particularly effective if your bedroom doesn't afford access to the attic.
