I am amazed at the jump in prices in just a short time. It's nauseating. I completely grasp the concept, and understand how it has happened, but as a mom, watching $20, $30, $40..more dollars escape my wallet, I'm sick over it.
Months back, Discovery Health expert Dr. Pam Peeke profiled how to feed your family healthy food on a budget.
Her tips focus on the whole food, instead of the pre-packaged shortcuts to which we've all grown accustomed. It's none too popular to add work for a mom, but honestly, with the prices skyrocketing, it's worth the extra time to prepare things, than spend money or serve junk.

For me, I've opted for buying the large container of non-fat yogurt, in lieu of cute one-portion cups. I bought a huge bag of full-sized carrots, and cut it myself into easy dipping size, instead of paying for cute baby carrots.
Now, I also spend about 30 minutes on a Sunday, slicing peppers, onions, celery, carrots, and cukes... so my salads are half-done for the week, and I can pack dips for my kids' school lunches.
It's a little more work. But, like so many other Americans, I'm bitter and angry about the financial mess we're facing, and I refuse to give in, and eat crappy food!
