Hi I was wondering what type of knives Curtis uses ? I know on the show he uses whatever they have handed, but was wondering if anyone might know what he would recommend for those of us interested in buying a good set or knife for our kitchen.

Although we have anly watched about a dozen shows it appears that Curtis brings his own knives to each show. It is too much of a coincidence that the same 3 knives are in each house. The 2 large ones are called santoku knives. I assume that he got them at Sur LaTable as they seem to be a sponsor. The black-handled one could be the Wustof #382101.The all-metal one may be a Rachael Ray #453894. Not sure of the shorter one but it too looks like a Wustof.

Is it possible they are special knives (left-handed)? I know that left-handed knives have the blades switched a certain way so the cutting and chopping motion matches the left hand. (That was probably really confusing.) They work like left-handed scissors. Lefties can use regular scissors, but it is awkward. I think the knife thing works the same way. Just a thought!

I am going to go check out knives this weekend as most of my knives are crappy.

It would be nice if someone from the show came on and let us know for sure. Thanks to you girls that posted about knives. :-)

Check out the Henckel site. I'm about to buy some of what I've seen him use. I've got some great Henckel knives, but the ones that he uses are called Santoku. The divots in the blade, prevent things from piling up. For example, if you're cutting onions, or carrots, what you have sliced often stays on the blade. what he uses, prevents that.

In Canada, Kitchenstuffplus.com, has a selection.

i actually have a Santoku Chefs knife that i got for 19.99 at a Chefs outlet store in the North Fremont Ohio mall...
they are very good useful knifes..but as some know he buys gifts for people....he goes to a store and buys them things to cook with in the kitchen..he probably goes to the same store and he buys the same knifes..

That is probably true for the most part about him buying the knives. He can't count on all his surprises having what he needs before he gets to their home. I was also wondering about the knives. I have a collection of cutting knives that just never seem to stay sharp enough. Even after using a knife sharpening tool. I went to the Sur La Table website and it is very helpful.

My wife and I went to Sur La Table in Pasadena this weekend and among other things, she bought me a Wustof 8" chefs knife for $99. You cannot go wrong with the brands Wustof and J.A. Henkel for chefs and santoku knives. I see that Curtis uses both chef and santofu style knives. I asked an employee in the store if they have recently seen Curtis and she said they have not. He must be on hiatus for awhile. Sur La Table, totally cool store with everything you would ever need.

I have seen him use a Global knife on several occasions and he even bought one as a gift on one show.

Allow me please to tell you my Wusthof "lifetime warranty" story. I had two expensive Wusthof 8" and 10" chef's knives (both same style/line). The 10" developed a problem and I mailed it to Wusthof for replacement (this was several years ago) and found out much later, when I had a problem with the replacement knife (the handle pulled away from the blade so that it became unhygienic). I called Wusthof and told them about it, and they said that it was an "inexpensive" knife. So basically, they had "replaced" my top-of-the line knife with a low-end one. They claimed they didn't have any low-end 10" chefs knives to send as a replacement for the 2nd bad one, and sent me some other cheap knife. Threw that one out with the garbage along with the 2nd bad one. Also, I was told an untruth. When I received the first replacement and called to tell them it didn't look like the knife I had sent in, nor did it match the 8" knife I had, the rep said that I was wrong, that they take pictures of ALL the knives sent in to be replaced under warranty. Well, I said to myself, if they took a picture and are telling me that's what I sent in, I must be either crazy or getting senile. For the second knife, the rep said they NEVER take pictures of incoming knives (said she had been at Wusthof years and years and had never seen a picture being taken of a knife being returned). It's not about the money - it's the principle. They replaced my good knife with a low-end knife. Tsk, tsk. So, I will never buy Wusthof again. And if you ever send a knife to Wusthof for replacement under warranty, TAKE A PICTURE OF IT before sending it in.

Absolutly agree that Curtis takes his own knives as do most chef's. It is not by chance that everyone one he visits has Wustohf knives which are the choice of most chefs. I have been collecting them for years - if you are lucky you can find them occaisionally at Tuesday Morning or TJ Max at about 1/2 of their price at Sur la Tab or William Sanoma. They are by far the best knives I have ever owned.

I personally like Ginsu knives easier to gag on when you cook!
