Hi there.... this is Eva from the meatloaf show and I have to say (2 years later) that I am embarrassed by the recipe I used. My new recipe ROCKS!! Try this and you will be hooked. Oh, BTW - it took Curtis several hours to make the sauce... a LOT of work. The glaze for this meatloaf takes about 1 minute to make:
I have included the original recipe along with notes on how I have modified it - just so you know an alternative.
Bacon wrapped Meatloaf with Brown Sugar-Ketchup Glaze
Serves 6-8
Glaze:
1/2 cup ketchup
4 T brown sugar
4 tsp. cider vinegar
Meat Loaf
2 tsp. oil (to brown onion in)
1 med. onion chopped
2 garlic gloves minced
2 large eggs
1/2 tsp. thyme
1 tsp. salt
1/2 tsp. pepper
2 tsp. dijon mustard (I use coarse and do heaping ones)
2 tsp. worchestershire sauce
1/4 tsp. hot red pepper sauce (I don't do this)
1/2 cup milk
2 pounds meat mix (you choose - but do at least a pound of beef) you can do the rest as sausage, veal, turkey, whatever- I do low fat Jimmy Dean sausage and ground turkey.
2/3 cup crushed saltines, or oatmeal or 1 1/3 bread crumbs (I do the saltines)
1/3 cup minced parsley leaves (I omit this)
8-12 slices thin bacon (I don't do this either...it is delicious even without bacon & I LOVE bacon!!)
Heat oven to 350 degrees.
1. Mix glaze together and set aside
2. Grill onions and mix beat eggs and milk together
3. Mix all the ingredients together in large bowl (except for glaze and bacon)
4. Place meat mixture in foil lined loaf pan
5. Brush with half the glaze and then top with bacon slices
6. Bake loaf until bacon is crisp and loaf registers 160 degrees, about an hour. Cool at least 20 minutes. Simmer remaining glaze over med. heat until thickened slightly. Clice meat loaf and serve with extra glaze passed separately. (I don't do the bacon and just put all the glaze on when I first put it in the oven - it is a lot easier and still super tasty)
