i tried posting this recipe earlier but it had some trigger words. it involves half-ripe east indian mangoes, vinegar, onions, pimento and scotch bonnet pepper. it's simple. peel the mangoes and cut them into strips 3 inches by 1 inch. fill a jar three quarters of the way with the mango then put in all the other dry ingredients. fill up the remaining space with white vinegar. make sure everything is covered. tightly seal the jar then forget about it for two weeks. after it is fully cured it's great with water crackers or as a garnish or relish. it is SPICY so have some cool lemonade handy. if there's anyone interested in jamaican recipes give me a shout out.
