I was afraid you would not see my post under CHIX. I would really like to have the recipe for the collard Curtis cooked for the show that you taped. Evidently that episode has not been posted to the board.
I think that he put the greens in water and tened to the chicken before he started cooking the greens.
1. Slice and Onion 2. Remove greens from water and cut (about 1" or so thick) 3. In a hot pan place onions (cook a little) then place greens. 4. Sprinkle some pepper. 5. Pour about 1/3 cup of White Wine 6. Then cook.
Thank you so very much. I tried the fried ciciken recipe last night and it was great. I am off to the market for collards. I am a southerner and usually cook them with hamhocks or fatback but these sound very light. Thanks again.
