Curtis - you're a doll, a great chef and I love the show but please re-think using foie gras. I was appalled when you showed such concern for how you prepared a lobster by numbing it so as to reduce it's discomfort before cooking and then served up two huge dishes of foie gras. There is only one way to harvest foie gras and it is by brutally force-feeding young male ducks and geese until their liver is 10 times it's normal size. Even the Pope has denounced this practice.
How sad to overfeed an animal. I have never had foie gras, but why hold it against someone who may not know this practice. I believe that the chef does believe in organic practices. Stop haten and be nice about the subject matter people need to know about something before you start naggin......g
