Repost: I posted this previously and didn't get any responses. Not sure why so I thought I would try again!!!!
Hello All, I am new to the low carb thing and have been trying new recipes. But every time I try frying the low carb tortillas (using La Tortilla Factory) to make a tortilla chips they come out leathery once they cool. If I fry them any longer to try and make them cripsy, they burn! What's the secret? What am I doing wrong??!!

Try a different brand. I use the Mission brand white low-carb ones and it works great! Very delicious to eat plain with salt or use as a dippper.

I know this is an old post, but someone may still be interested -

i use low carb pita bread - slice it in into 8ths - like 8 pieces of pizza. then i split them open and slice again so i have 16 triangles. i spray with butter pam, sprinkle with salt and broil in the over. delish with a taco salad or just with a little cheese and pepperoni on top! 7 carbs for all 32 'crackers'!

I spray a plate with oil then take a round Provolone cheese slice and microwave it for 45 seconds until it is golden brown. Then, you can make crispy "tortilla" shells You can either mold them into a taco shell shape or break them up into "chips". You just have to be quick about it because they cool very quickly...it tastes great.

I know its been awhile since this question was asked but you can get these flat breads from BJ's called Josephs flax,oat bran and whole wheat flour lavis bread(4 carbs) cut these up with a pizza cutter into tri-angles and fry them in peanut oil and sprinkle with white chedder popcorn seasoning (no carbs or suger) and u have chips!

We always get better chips from stale tortillas.
You heat them on a comal or dry cast iron skillet as if you were going to use them for tacos.
Then, cut them into triangles if you want.
Then, put them in a grocery bag and let them sit for a few days so they will go stale.
Then fry them.
