Apparently flying fish take a 'taxiing takeoff' before launching themselves in the air. Then, their fins billow in the wind, which confused scientists at first for flapping as seen in birds and bats. They then fold their 'wings' to their sides at the end of their glide, slipping easily and quickly back into the water.
I've done some research for a project, and I keep hearing about some high speed photography that has been taken of these quirky fish, but it seems the common man can't get any access to it. Time Warp, will you heed my call? It just sounds so darned awesome!
