I am going to make Curtis' Pot-au-foie for my boyfriend for Valentine's day, and was wondering since I can not afford fresh truffles if I should use frozen or jarred. Also if it makes a difference if they are Chinese, Italian, or French? If you can help please let me know! Thanks!
