On the show I watched today which was a menu for Rosemary and her family, Chef Stone prepared a vegetable that resembled a type of endive in the artichoke family but I couldn't catch exactly what he was calling it. I think it starts with a V and is long, white, with purple tips. Chef boiled it for an hour, cut it in half lengthwise, added honey and sauted it for a while in butter then added cheeses and put it in the oven. Can anyone tell me the name of this vegetable and exact instructions for this recipe?
