I need help, please! I've tried to make the lemon tarts twice now and both times it came out really runny. I thought I was following the recipe correctly, but my tarts look NOTHING like Curtis'!
The first time I tried to whisk it by hand and the second time I used a hand whisk on low thinking that was the problem. It wasn't. Someone please help!
The filling for the tart is a lemon curd and if you don't cook it long enough it's going to be a bit runny. Really make sure when you test the curd on the back of the spoon (ie. dunk a spoon in the cooked curd and swipe a finger through it) a clean line should be apparent and distinct. Even if you slightly overcook the curd, you can "save" it by giving it a quick blitz in the food processor. And make sure the curd-filled tart is well chilled before serving. Hope that helps.
