Hi Curtis. i'm from jamaica and a lot of thwe ingredients you use are not readily available here. as a result i am a bit shy to try some of them because i do have food allergies. and since i've had for example mushrooms i don't know if i'll have an allergic reaction. i know it may be an imposition but could you maybe suggest alternatives for persons who may have allergies. for example a few days ago i watched the episode where you did the beef wellington but you had it wrappped in a mushroom paste. is there anything else that i could use? another thing, you tend to season the meat just before you cook it. i'm not sure how that would work in jamaica because our meat for the most part has to marinate for twenty-four hours at least. personally i don't mind bland flavours, although on my fathers side there are many spicy indian recipes. but think about it please and let me know. ciao. P.S. in spite of my allergies one thing i have never had and would love to try is oysters.
