I saw this show for the first time today, and was completely disgusted! I saw him make chicken cutlets with pork rinds that were drenched in butter. There were hardely any veggies or fruit on his plate (wait the cheesecake made with a whole stick of butter that was just brimming with fat had two maybe three raspberries) I'm really confused, isn't the whole point of this network to educate people about healthy eating habits, and ultimately healthy recipes. I would NEVER recommend any of his recipes to my clients, and to cut out carbs completely is ridiculous! Not to mention the fact that he is huffing and puffing the entire show, and is clearly out of shape/overweight. If I were you I would re-think the name of the show, Low carb? - High fat unhealthy cooking with Blaine, that sounds more like it, then at least the viewers are getting the truth!
You haven't tried a low carb diet. It actually changes the way you body makes energy. By cutting carbs, your colesterol goes down, and your body burns fat for energy. You can test it with urinalysis strips from the drug store that measure ketones is your system,
Dr. Atkins wrote a book, and explains it scientifically. I can tell you that I lost 25 lbs in a couple of months and am still on it to lose another 10 or so. my cholesterol dropped 30 points on this diet from my last year's bloodwork. My doctor said stay on it! You don't count calories, just carbs; and it works.
I, too, was told by my doctor to create a food plan around low carbs. And I know it works! I gained 30 lbs after taking steroids and other meds for cancer (bone marrow). I still take the meds and have to fight weight gain everyday as well as work on losing the weight I already gained. The only way I get enough food and lose weight is by eating low carb foods. (Yes, I do workout.) Not low calorie, but low carb. As a professional, you may want to re-educate yourself. Maybe your "clients" are going to someone who doesn't know everything you need to know regarding health care. You don't need to be confused, you just need to know that you don't know and learn from the people who "been there, done that".

I have lost 35 lbs and dropped 20 cholesterol points, and my fiance dropped 40 lbs and 15 cholesterol points. These recipes were a godsend because after a few weeks we were tired of eating the same boring chicken, beef, fish and pork. This show shed new light on eating lo-carb but not feeling deprived.
mamazcatmd, I'm sure you're good at what you do but you may want to do some research into it. When you reduce carbs to the levels of a low-carb plan, your body switches its main source of fuel from carbs to fat. It doesn't need to produce as much insulin to metabolize carbs (hence, perfect plan for diabetics), maintains stable blood sugar levels since you never have spikes like the ones you have after a high carb meal. Fat as fuel is less efficient than carbs, therefore the body burns more of it to use it as energy, that's why you can eat butter and pork rinds because the body utilizes fats almost immediately as fuel, instead of having to wait until you exhaust the carbs you've eaten to dig into the fat reserves your body has. And yes, he's huffin and puffin because the point of the show is to go along with him on his journey to get healthier while on a low carb plan. That show was one his earliest shows, if you watch some of the later ones, you'll see that he did actually loose some weight.
