So... why didn't John Vo just have you put 14 scoops in the first bin and then 14 in the second? You asked several times but the question never got answered. Haha it drove me nuts. Instead of [14/14] you did something like [8/8, 2/2, 2/2, 1/1, 1/1].

Sooooo....

My guess is you want an even distribution of the curd and the whey didn't matter (hence the guy not worrying about the sloshiness). So with each scoop as you go along you'd probably get different ratios of curd to whey, hence switching back and forth. Starting out with 8 and 8 was probably just to start out.

I guess John Vo just insisted on doing things a certain way because he did it for so many years :P

That's probably part of it, also, that it gives time for it to settle, so more can be put in, the liquid not being needed, and the solids being what matters, putting some in, waiting, then putting more, lets the solids settle, and the liquid rise to the top, to be displaced and overflowed at the end.
The employee may understand this, but not know how to explain it in English to Mike.
