If you put a watch in a centrifuge will its increased speed cause it's time to slow by the equations of special relativity? How fast would it have to turn?

Even if it's spinning at 1 km/h, it will slow down time. You can use the chart or formula in here to see by how much. If it's spinning at .866x the speed of light (really, really hard to do), then time will go half as slow.
