I think Amy should have a cookbook. She is shown cooking a lot and it is always being said her food is amazing.

Amy probably does not create these recipes, but gets on the Internet like most people....But hey, spend money on her cookbook.

Last season Amy made enchiladas (sp?) Matt and Jeremy couldn't wait to eat them. Looked great. I'd like that recipe. Would she post it?

This is funny, guys. About this time last year I got involved with this forum and we were talking about the same thing. The enchilada recipe was in demand and we had quite a discussion about the fact that the Roloffs don't read this forum. People wrote in their recipes and told others to search the internet for recipes and everyone agreed that Amy could make a million dollars if she wrote a cookbook! We got so riled up that we convinced the people in charge to change title of this thing from "Ask the Roloff Family questions" (or something like that) to "Sound out about the Family", the title was "misleading". So here we are again. How do you make those dang enchiladas, Amy?

Basically she opened a can of enchilada sauce and a pack of tortillas and cheese. Browned some ground beef with some taco seasoning... threw that in some tortillas, probably added some cheese, rolled them up, placed them in a baking dish, and topped them with a can of enchilada sauce. Topped them with more cheese and baked.

You can then top them with some sour cream, guacamole, shredded lettuce, pico de gallo, etc. Smile It's too easy, just give it a try. Just throw in what you like.

I agree, kitchen is a mess, (don't know about "filth").

As for Amy's cooking? What cooking? She is constantly shown boing pasta, topped with sauce from a jar mixed in with ground beef! Yuk! I've never witnessed any 'culinary' action coming from her kitchen.

Enchilada Recipe:
bag of 'good' (frm trader joes) flour tortillas (no i don't use corn-to dry)
precooked, deboned chicken frm your local market
can of black beans (drained)
can of corn (drained)
seasonings, to your taste
sm can ortega chopped chile
jack cheese, grated approx 2-3 c or to your liking
put chix, beans, corn,chile, cheese in flour tortilla.
roll, (not to tight)
pour lg can of enchilada sauce over tortillas add cheese to your liking.
bake in 350 degree oven for approx 35 min
when sauce begins to bubble you are ready to eat! offer sour cream and sliced avacados!
serve with a caesar salad and a cold beer!

Not only would I not order a cookbook by Amy, I would never look a book about housekeeping. Why can't those kids at least keep their rooms clean. Matt had his worker organize the basement...please have him do something to the other rooms. Most of the time they are a mess. I don't expect Amy to do it all...those kids could get off the video games, texting, sitting, etc. and clean something. Maybe they could get the Duggars to come over and show them how to do it! What a great idea for a cross-over show!

Corn tortillas really do work better, you need to heat the sauce and dip the tortillas in the sauce to soften them a little (be careful not to dip too long or the tortilla will disintegrate). Flour gets gummy too fast.

I prefer the taste of flour tortillas to corn tortillas. You can easily avoid the mushy flour tortilla by putting all the ingredients on the inside and folding it up and searing it on a hot pan. It will not only heat up the tortilla and melt the cheese inside, it will also enhance the flavor. Or just be light on the sauce and put them under the broiler (uncovered) for just a few minutes. Just long enough to melt the cheese on top and get them nice and hot. They won't get mushy this way.

hmmm? I disagree on the "corn works better". Flour tortillas do not get 'gummy' soft, but not gummy,(I've been making these for years.) Corn is healthier but really messy and time consuming. I wanted less mess with a good result.

I never see Amy fix much of anything except pasta, and more pasta. It is good, but she should change up occasionally. If she stayed out of the kids hair once in a while, she might be able to come up with some new recipes.

Neither was Matt's plan upon being diagnosed..which was "I don't wanna do this, I'm gonna hire somebody".

Matt orders large when he eats out, and I wonder if he follows any diet plan for diabetics at all.

Tree, I Googled this and it looks like all pasta is potentially a blood sugar raiser. If you top it off with tomato sauce, it makes it even more dangerous.

Carbs aren't good for diabetics because it raises their blood sugar level. Potatoes, pasta, sugar, breads, etc... are all bad for diabetics. Really and truly, they're not good for anyone. They sure taste good, but they are just empty calories.
