In middle eastern drumming there is a variety of styles. Some are hard to learn because the movement is just so fast your eye can't see it right. You hear a noise but it looks like the finger never even hit the surface. I think it would be extremely interesting to see the finger's descent, the impact with the drum head and the finger's bounce. For example this video is of Raquy Danziger, who is probably one of the best hand drummers in the US.
I've taken a class or two with her and have in the past become so frustrated because my mind couldn't wrap around what she was actually doing. It's not possible to slow down parts to demonstrate or else you won't produce the right sound.
If you'd like to reach her for your show (so you don't have to try and FIND a drummer, instead you can use some with a lot of credits behind her name) you could probably get in contact with her through her site: http://www.raquy.com/
There are also dejembe drummers or west african drummers who have extremely fast movements, but they aren't as nuanced as the snaps and split finger techniques that are normally applied on a dumbek.
