There is a bakery in Teaneck, NJ that has been in existence for 26 years. There are two employees most times. A master chef for 40 years, who hones a mouthwatering sultry art with all natural products from scratch, and his wife, who manages the store, are those that sustain this decadent ginger bread house. This team has visitors from miles and miles around. Although in the shadow of NYC this mom and pop shop outshines most if not all competitors in the big glamorous home of the yankees. From making croissants, to mousses requiring finger tip to shoulder blade mixing in giant bowls, to making marzipan roses fully equipped with petal, leaf and vine using an unscrewed unshining light bulb these techniques are decades old, fascinating, and Dirty (if you call flour, sugar chocolate dirt). This man is a an artist, a sculptor using sugar laden foods as his medium. I call him the pastry making polycletus. Give it a shot Mike you wont be dissapointed
