I'm a biologist with a state fish and wildlife agency. Every year during the first week of December teams of our personnel visit the local butchers to collect deer heads from their smelly, slimey waste barrels. First, the team cuts open the jaw to age the deer, then the team bring the heads back to an office where we scoop out a sample the brain to check for chronic wasting disease.
