The town where I grew up, LaBelle, Florida, is the home of the annual Swamp Cabbage Festival. Over the last full weekend of each February, the fine citizens of LaBelle clebrate a local "delicasy" - The heart of the Sable Palm, Florida's state tree. The swamp cabbage is harvested with specially designed axes, or more often chain saws, and cane knives or machetes. It's processed into a (God awful) boiled mush, or a somewhat more palatable fritter. The festival includes a rodeo, a parade, armadillo races, lawnmower races, and the selection of a (This is no joke) Swamp Cabbage Queen. Though the harvesting of the swamp cabbage is not technically a source of employment, it is a labor intensive task, which has been faithfully undertaken each year since 1966.
