If at all possible I think flash freezing water in mid air would look really cool. Literally. It wont have a definate form either which makes it even more interesting. You could even have it shatter at the end on the ground.

Keeping with the ice theme. I wonder what a large chunk of ice would look like when a blow torch is taken to it in slow motion. Will you see the steam from water evaporating?
