Nesco made our dehydrator, and we've used cures from them and also a company called Hi Mountain.

Always happy to share!  Venison is wonderful with the same cures, but harder to get ones hands on. Beef is an easy staple.

Hi y'all, I've made jerky from venison and rabbit. Been a long time though. I just rubbed black pepper, salt and a bit of Louisiana Hot Sauce onto the strips and then put them in the oven at 200 degrees F. When the strips crack when bent I take them out. If I ever find a cure for RipVanWinkle Syndrome (syndrome where a hunter falls asleep in the woods) and find a suicidal deer I'll make some more. For introduction, I live in the extreme SE corner of Oklahoma. I'm a former science teacher, BS in Biology, Chem minor, ME in Administration. I got tired of having to subsidize teacher's salary by driving a bus route AM and PM, and working at Wal-Mart on the week-ends so I took a job at a paper mill about 20 years ago. You know those bales of cardboard behind WalMart and other stores. My department recycles around 2,200 tons/day of those. Send the fiber to the paper machines where they mix in new fiber and make over 5000 tons/day of Kraft liner board and corrugating medium paper. You've probably seen some of my replies in the weapons forum. I'm a Cowboy Action Sh00ter, and as you can see from my log-in name, there is only one kind of gun powder. That new fangled smokeyless powder is just a passing fad.  Mythmod, thanks for the new forum. Call me Pulp

thank you guys. pulp: thanks for the recipe. i know what you mean about financing your salary. it's amazing what you sometimes have to do to follow your vocation. but hey!...look at the bright side. now you get to teach and learn here.

About Meat Jerky-
I just slice the chosen meat up, marinate it, or not, and stick it in the oven on real low, --around '150-'250 degrees and watch it closely to get the right moisture in the jerky, about 10-30+ minutes depending on starting moisture and meat-slice size.
On a side note --When stranded in Pennsylvania with a blown motor years back, I got a deer and dressed it out in the motor home’s propane stove/oven to store it and it worked just fine.
Even drying it in the sun is OK if you're on a hot day in the direct sun like the Native Americans did traditionally. :-)

I have the same syndrome!
I think maybe that it is age related.(At least in my case.)
As to the jerky recipes, there are many to try, and most are good.
I like mine soaked in a light brine, dried with a paper towel, lightly peppered, then dried.
I have also made a marinade with steak sauce, water, a little liquid smoke, and then dried.
One tip if drying it in the oven is to use wooden, round toothpicks and suspend the strips by one end, across the racks, hanging down.
You can get way more strips in the oven this way, compared to laying the strips across the racks.
I usually put the oven on low, and put a spoon or something in the door to hold it open just a bit.
I tell how dry it is by putting a piece in a zip-lock bag, and see if any condensation appears, if it doesn't, it is dry, and won't mold if stored sealed up in a bag or jar.
